Miner extractable value (MEV) is a measure of profit that blockchain miners can make through their ability to arbitrarily include, exclude, or re-order transactions.
Miners (and validators) process and validate transactions. Because they have full visibility of all transactions, they're able to reorganize the transaction at their own will and front-run other users' transactions. Thus, enabling miners to make profits over these users.
